yummy cutlets

Doesn't this look yummy? :)


Hehe, I didn't make it... Thanuja (a dear friend I met here... she is from Sri Lanka) made this for me! *touched*

These are called "cutlets", but it is not like those pork cutlets of chicken cutlets we find back at home. These are round, and made of fish and potato mix...

And trust me, it tastes as yummy as it looks!

She has kindly provided me with the recipe... here it is!!

To prepare 20-30 cutlets,

THE MIX
* 1 canned fish- Saman
* 1 big Onion chopped
* green chili
*curry leaves
* 2 tbs Vegetable oil
* Salt, Pepper
* 2 or 1 medium Potatoes boiled, skinned and cut into pieces.

THE COATING
* mix flour and water so you can dip the cutlet balls in it (add some salt to this mix)
* Toasted bread crumbs (ground)
* Oil for deep frying

METHOD:
* Heat the oil in a frying pan.
* Add onions, green chili, curry leaves.
* Cook until the onions are tender light brown.
* Add salt, pepper.
* Add potatoes and mix well.
* Allow to cook for a few minutes.
* Add saman, stir all together.
* Stir and allow to cook for 5 minutes(Heat should be low now)
* Turn off heat.
* Seperate the mix and shape in to small (2 inch diameter) balls or thick discs.
* Coat the balls with flour cream and then with the toasted bread crumbs.
* Deep fry in hot oil until the crust is light brown.
