Christmas Bakes

Nope, we didn't do much on Christmas day, except to visit baby Irwynn in the hospital. But before that, I thought it will be fun to do a little baking... After all, it is a good chance to give away my bakes, since it is Christmas. (On non-festive-days, both of us have to finish off the bakes ourselves, which I assure you is not a fun thing to do...)

Here are the cookies that I baked!

Technically, these are not Christmasy at all. They are actually Mexican Wedding Cookies. But they are real easy to make, and very yummy too! Plus, no heavy machinery needed, and the ingredients are easy to find.

Here's the recipe:

Butter - 1 cup
White sugar - 1/2 cup
Vanilla extract - 2 tsp
Water - 2 tsp
All purpose flour - 2 cups
Almonds or pecans, chopped - 1 cup
Confectioners sugar - 1/2 cup

1. In a medium bowl, cream the butter and sugar. Stir in the vanilla extract and water. Add the flour and nuts, and mix until blended. Cover and chill for 3h.

2. Preheat oven to 325F.

3. Shape dough into balls or crescents. Place on an unprepared cookie sheet, and bake for 15 - 20 min. Remove from pan to cool on wire racks

4. Roll in confectioners sugar when cooled. Store in airtight container at RT.

Okay, I skipped the last step, coz I didn't have the confectioners sugar. But they tasted fine without them.


And here are the cookies, after packaging! I forgot how fun it is to wrap things up and tie ribbons... Didn't have wrapping paper, so I used aluminium foil and crushed baking sheets for wrapping... Heh heh...

And nope, we didn't have a white Christmas. Didn't snow, and whatever snow we had on the ground have melted away on Christmas day.


And we received a Christmas present from Josh and Linnet! It is a gift card, but not just an ordinary gift card. It plays "Deck the Halls" when you press the button! So cute...
